Publican Quality Meats is a small storefront butcher shop that also makes great food, coffee, and bakery items. They have some other staples you can pick up. They are located on Fulton Market Street in Chicago. We had heard of it as one of the best butcher shops and decided to stop in and try out a charcuterie board.

The Charcuterie Board

The board was more than enough for two folks. It included everything I would expect. The meats were salami, prosciutto, and a pâté with pistachios. The salami was thinly sliced, well spiced and firm. All paired very well with three cheeses; one aged, one very creamy, and one firm. It was all too delicious to choose favorites. The board included other staples like bread, nuts, pickles, mustard, and jam.

Behind the Scenes

We used the downstairs bathroom before we left. I was surprised to see the butchers and kitchen. Before turning left to go to the restrooms, I saw a walk-in refrigerator with a glass door. Three whole hogs were hanging, waiting to be processed, and lots of other meats were visible. To the right I could also peer into the open kitchen door where they were working. There were lots of white chef outfits and it looked very top-notch.

Final Thoughts

Next time I go back I’ll bring a cooler. There were lots of bakery and butcher items that I would love to try at home.
